Hey mate,
Can you replace your config.plist with the one provided below? It will boot in verbose mode so we can see what is wrong easier than this. Have you disabled your cfg lock through open core as explained in readme section? this new config will bypass this temporarily.
I tried config.plist provided by you and I got this logs when select Big Sur in opencore.
maybe yours is similar to https://github.com/wadimw/dell-7577-hackintosh this one. try that efi from wadimw
My laptop has same specs except SSD which is mentioned in your repo description. I have Samsung 970 evo plus in my laptop. I think mac os is not compatible with this SSD. But I also read some newer posts that say new firmware support macOS. I have the latest Samsung SSD firmware.
After you update your bios version , try with this efi folder and make sure that you enable ahci mode to sata in bios setting. you can skip cfg lock part and vt part cuz they are enabled in config.plist for now. config.plist.zip we need more info on subject if possible.

Ok, update your bios, adjust settings as explained ( and check these ones >>> Intel SGX enable & Enclave memory size 128MB ) and RESET NVRAM then try again.
Bro I don't get the lines in .txt file, so if above suggestion is not enough to solve it, please head over to r/hackintosh, insanelymac or even tonymax86 to seek help. sorry my knowledge ends here and I can't help further.
I am stuck at apple logo while clean install of MacOS Big Sur on Dell 7577. I don't know what's wrong I am doing. I am uploading my EFI here. I have also updated SMBIOS parameters in config.plist. My EFI folder is from the latest release. I am using offline installer created with macOS.
