Bumps nix flake from v0.38.1 to v0.39.1 #38

I took liberty of upgrading the flake.nix and flake.lock to v0.39.1. I tested it on my own machine at it seems to be working.

I also upped the plugin version to 2.2.1.

I would not mind if @wiillou takes another look at this :)
