Its a small issue - and I'm willing to contribute the code for the change.
When doing input via MIDI, the language used is the default dutch (eg "fis" for f sharp).
It would be convenient to: 1) Have a setting for the default language, with dutch as the default setting. 2) Based on this setting, use the different language options as described here: https://lilypond.org/doc/v2.24/Documentation/notation/writing-pitches#note-names-in-other-languages
