Add documentation and comments for GitLab configuration for GitProvider Receiver and demo #10

Update the existing olly-demo solution to also work with GitLab. For context, I would like to have the Engineering Metrics (signals from git) working at all of our GitLab customers and added to the LDM.

The demo already supports this but the collecto configuration in liatrio-otel-collector and demo isn't there.

Should we build this into the tag-o11y-quickstart-manifests repo? This should be easy for us to carry to client sites. We would only need to setup the gitproviderreceiver config for a client's infra.
