Update `examples/` #3017

The examples are using a fairly old version of go-libp2p at this point. It would be nice to update them.

Hi @MarcoPolo,

I would like to contribute by updating the examples in the go-libp2p repository. I will update the dependencies and make sure each example runs properly after the update. Let me know if there's other considerations on specific examples to have into account.
