chore: Update to sidekiq 6

This bumps sidekiq to the next major version and I've refreshed some of the config based on what we have for other projects.

• Pretty log formatting
• Better logging for SidekiqUniqueJobs & enqueuing
• Use the built-in Sidekiq support in Marginalia instead of deprecated custom gem
