Not sure how to link the updated version, but It would be very much appreciated if more instances are available

I think this link — https://git.macaw.me/skunky/SkunkyArt/raw/branch/master/instances.json should always point to the latest version

I made a pull request that include resolving this. Gonna rebase when the mirror updates if needed
