Transition smoothly to v2

After many discussions, and some more thoughts, here is the proposed plan:

• I tagged the current status as v1.0.0
• I created a branch v1
• I'm renaming applications from name to compose-name
• the plan is to use the same docker images, if we need to differenciate them too much, then we'll tag them appropriately.
• the development continue to happen here to avoid too much confusion of moving things around.
• I just started to move changes I did on the gitlab, and push commits here

Ok, now everything is up to date in this github organisation, and there is no more repo in our gitlab.

I also archived/deleted all that didn't make sense anymore here.
