My goal with this update was just to have the currently listed cores reflect their current status, as the current documentation is several years out of date and has been causing some headaches for our team as players find the libretro documentation and think a core is supported when it isn't.
If merged, I will do a second PR later to flesh this document out with the missing cores/platforms.
