fix: Add missing install document

Just added a quick install document so people who aren't familiar with cmake could build nvi2.

nvi2's build supports multi-config #79; we should recommend this approach. Also, it'd better be in Markdown. An alternative is to leave the docs as-is and create a new wiki page: https://github.com/lichray/nvi2/wiki

I'll rename my INSTALL.txt file to INSTALL.md, merge your multi-config #79 information as best I can into a document that makes sense and re-submit a new pull request.
