Investigate colour pickers #1689

There are a couple of issues related to the colour picker: https://github.com/lightdash/lightdash/issues/1579 https://github.com/lightdash/lightdash/issues/1638 https://github.com/lightdash/lightdash/issues/4364

Progress on those issues is currently blocked because our colour picker is not very flexible. If the above issues become super critical, we would need to build our own one. I wonder if there are any other libraries we could use?

There are workarounds for the tickets mentioned, but they will result in really bad user experiences.

I think this is going to become important very soon if we want to work on conditional formatting.

@PriPatel do you think this work should come in before or after conditional formatting?

I think that V1 of the conditional formatting we can leave it relatively "hacky", but then to implement these issues, we'll need something a bit more advanced:

Right now I visit https://coolors.co/gradient-palette/e7f9ff-004ec2?number=4 whenever I need anything other than the presets.
