To bump containerd from 1.5.11 to 1.6.4

I thought that containerd was provided by lima ? Anyway, would be good to upgrade.

EDIT: what I meant to say was that it could use a custom tarball, like it does for ubuntu.

It seems like nerdctl is now in "testing", but no buildkit just yet (I should submit it).
