refactor: create plugin registry for centralized plugin management

• Use registry pattern to manage and register all plugins that extends a plugin base class
• Reset db schema by renaming schema fields to more readable ones
• Create a new prisma db migration record
• Remove unnecessary and unused files of the old plugins
• Move assistant prompts to .env.example for more flexible management
