Improve variable names #17

I was trying to work through understanding the Bioregistry import and had a really hard time understanding cryptic variable names. This PR updates them to be nicer in some places.

@cthoyt you're welcome. There's a ton of extra information available in Bioregistry that I think can make this mapping better. I've also updated some of the prefix map generation workflows to reduce the logic necessary here.
