Refactoring : unify Kaldi & Whisper STT #34

Unification of Kaldi and Whisper STT in a same repo.

Each of the two STT subfolders have:

its own image name
- lintoai/linto-platform-stt-kaldi
- lintoai/linto-platform-stt-whisper
its own RELEASE.md (versions)
- kaldi continues with the same version numbers as before (lintoai/linto-platform-stt -> up to 3.x.x)
- whisper restarts from 1.0.0 (instead of 4.x.x in lintoai/linto-platform-stt)
its own README.md (doc is slightly different, regarding environment variables to set)
its own "stt" folder with the relevant sources

And what is shared:

http server related things
celery related things
health check
