I can't do much about this, it's your chosen theme+iconset combination.
You can use the "Override label on panel" config option to put anything in the label, so you can create some artificial padding by using {t} {u}
value and adding spaces before
Perfect. That fixed it!
I added 1-2 spaces before the code you gave me and it fixed it.
What is the meaning of each of those tags?

It's in the tooltip as well, but:
{t}
is replaced to display the temperature value{u}
is replaced to display the temperature unit{c}
is replaced to display the weather conditionexcellent. thank you.
I guess perhaps you could add a global doublespace between the icon and temperature unit and then we wouldn't have to customize it to make it right again.
This was working perfectly before but seemed to change in the last few weeks.

Something might've changed with your theme, iconset or Cinnamon.
Mint-Y theme works just fine, and I must prioritize that over other themes (as it's around 50-50 that a theme works correctly with an IconLabelApplet or not)

Issue
There is an issue with the spacing between the weather icon and the temperature on the panel. This seems to have been introduced in the last few weeks. The issue is that there is now virtually no space between the icon (in my case a cloud) and the temperature (in my case -1 C). Before this happened there was a normal space between them so it didn't look so scrunched.
Steps to reproduce Simply start up Linux Mint and view the desktop. The weather icon is almost touching the temperature figure.
Expected behaviour There should be more space between the weather icon and the temperature figure. You can see this in the screenshot in the Applet webpage. The spacing there looks normal and it is what I used to have. I have a screenshot to show you what is happening on my system.
Other information I'm always using the latest weather applet icon update. here is a screenshot to show you what I'm seeing on my system. below you see a screenshot from the weather applet webpage showing proper spacing between the icon and the weather description and temperature figure.
