In this PR, I've added a missing symlink for the icon used by the MKVToolnix version included in Mint 22 repositories.
While looking into this, I've discovered that the MKVToolnix icon is used for the repository version of GNOME Builder too. I think this does not make sense for the following reasons:
the themed icon used for MKVToolnix is the official logo of the Matroska project, which has nothing to do with GNOME Builder
GNOME Builder has a completely different icon, which is already used for the Flatpak version (there was no symlink for the latter)
I have therefore removed the gnome-builder -> mkvtoolnix icon symlink. Might be worth looking into making new themed icons for both apps though, because MKVToolnix has its own logo which is different from the Matroska one.
