Add time zone format to readme #56

What is the expected format of the time zone in the docker-compose environment variable? "Europe/London" does not appear to match any of the standard names for time zones that I'm aware of: https://gisgeography.com/world-time-zone-map/

It uses the TZ database names https://en.wikipedia.org/wiki/List_of_tz_database_time_zones
