build: update macOS xcode SDK -> 12.1 & update deps #934

An UI issue was noticed on Litecoin Core 0.21.x, which was built with Xcode 11.3.1 SDK. This bug only seems to affect Litecoin Core in newer releases macOS >14 (Sonoma).

The top bar would intersect with the navigation bar, making it impossible to click on some UI elements. Furthermore there app would be slightly vertically stretched.
