A lot of pydantic specific tests were spread out across various files. This PR aims to fix that by moving them all into test_pydantic_factory.py.
Also, this PR ensures there are tests for the union handling for all the factories (beanie and odmantic factories are skipped since they're just pydantic models which already tested).
