update project README's to fit the template #27

@mtorabi59 , could you update your project README.md so it follows the template?

@jeromedockes , could you update the project README for the participant_demographics project? The project folder looks more complicated now that the students have contributed, so I'm not sure how to fill everything in

FYI, for both of you, this isn't urgent. We wanted to focus on the paper now, moreso than the repo. I just wanted to put it on a todo list while I was thinking of it. And I thought it would be easier for Mohammad to fill in the info while the project is fresh.

it seems a bunch of the project READMEs contain some template text, rather than a filled-in template. was that an error? or what is the rationale?
