Resolves #164 by placing PDFs in the Jekyll assets directory.

Here's a quick Loom that's walks through the change.

Simply use /assets/pdf/the-file-name.pdf for any Markdown links and it will search the directory for them automagically. Also, files will need to be uploaded into the assets/pdf directory moving forward so that hyperlinks work as desired.
