Add Posthog to see simple tracking of use #206

Adds a simple posthog integration, in the hope of easily seeing how the site is used.

Since we basically only track for logged in users, I don't think we need a cookie banner for this. The data is also hosted in the EU, and IP adresses are omitted from results. I've updated the privacy policy to reflect it.

This looks OK to me. Posthog seems to be in compliance with SCHREMS 2. I do believe we need a cookie banner/optin for this, but that could probably be fixed at a later date.
