updating deps #2

This image might become very useful as the base for all our R-based functions.

It seems there's a solid body of packages we use across our functions, and that are not already installed in the base image. (Or maybe they are, but we're not yet handling dependencies properly... see #1)

The packages lists the packages installed in this image. What's missing? I'm going to try to keep an eye out for when the functions build, and see what still needs to get installed (and takes time).

Even with all these deps, the disarmr package takes ages to install still... We might need to look at making a dedicated image based on versions of disarmr. Otherwise every rebuild of a function that uses disarmr takes a long time.
