Update jenkins E2E tests for python version #871

PR #858 Updated the python version. The jenkins E2Es have not yet been updated to reflect that:

Installing dftimewolf requirements via Poetry
The currently activated Python version 3.10.12 is not supported by the project (>=3.11,<=3.13).
Trying to find and use a compatible version.
