Remove old code from the project

There are few steps for this to be done:

• Complete the backend for v2 of the scaffolder
• Complete the CLI for v2 of scaffolder: (https://github.com/log2timeline/PlasoScaffolder/pull/40)
• Delete / remove old tests: https://github.com/log2timeline/PlasoScaffolder/pull/36
• Delete all the old code: client and diff
