[Doc] kafka client version is outdated #143

Tell us about the issue

Description:
The latest plugin has upgrade to use kafka-client 3.3, however, the doc is still pointing to 2.8

This plugin uses Kafka Client 2.8. For broker compatibility,

The doc apparently has updated the variable to 3.3, but it didn't reflect to the doc

The latest kafka integration in Logstash 8.7 is 10.12.0 So, the doc is correct
