This will disable Darkwake in macOS which cause this issue
Also your config plist + OpenCore version is outdated ( 0.8.8? ) ( I guess you are using OCAT and forgot to sync to the latest OC version, update it! )

maybe you're confused, I'm on OC 0.9.7 and not using OCAT

i checked the config.plist again i was missing one of them, maybe i missed it during manual OC updates
