🗄 Flatten V0 migrations #143

Purpose

By flattening all migrations related to V0 we remove any previous backtracks and simplify the SQL code so that future devs can easily understand the database structure.

Also solves issue #140 by changing varchar(255) columns in the DB to text fields with unlimited length.

Testing

Unit tests and manual requests all pass!

After this PR is merged, current devs will need to remove all containers and volumes and rebuild the docker-compose.
