docs: fix light color code over light gray background

• [x] Fix light highlighted code over a light backgound
• [x] Provides an example of color that will allow a better readability on documentation (which can be any other one)

I think I might have missed some other use case too like here, where the html tag is only <pre>

I'll check it out when it's deployed to look into every other page!
