Hello ! I am the main developer of dezoomify, and I am not a suscriber to the NYT, so I cannot help with that. If you are ready to implement it yourself, you can read our wiki for more information.

A related aside, and totally fine if you have no idea: do you know of an infinite/scrollable virtual desktop software for Macs? I can only find them for Windows computers. Ie for screenshotting images that can't be saved.

I don't think you need to download any special software to get an "infinite screen" on mac. You can olready make the windows larger than your physical screen size natively.
Here is a test I made, screenshotting a window that is larger than my screen:
Unfortunately as far as I know Mac now prevents you from making it taller than the screen, although you can make it wider. Not sure why. If you move a window down and resize it from the top, it snaps back to the screen height when you let go
