(#29) Refactoring code and reorganizing directory

Addresses issue #29

• Created a prototypes/ directory with all the prototypes developed during the sprint.

  • Changed some code around in the jupyter notebooks, though they still need a lot of work. Made them have more representative names as well.
  • Added READMEs all around, to make the structure less confusing to outsiders.
  • Turned the R Shiny app into an R project with an isolated Renv environment, to improve collaboration.
  • Linted the R Shiny app with lintr, to conform to the tidyverse style guide.

• Fixed some markdown syntax errors on the issue template

• Improved the .gitignore for R & Python development, which will hopefully maintain a clean repository.
