Current devt is done on previous lts 16.x, need to see impact , mostly for simulator because it seems there are new restrictions by default to access local fs

Seems ok so far , just needed to update nodemon to V3 - I will update all docs tomorrow

all ESP3D eco system has been updated to use Node 20.8.0 and npm 10.2.0 Docs have been updated accordingly
