Upgrading JWT auth package with a supported version

Description

the tuupola/slim-jwt-auth is no longer maintained replacing it with one which is.

Fixes #28

Bug fix (non-breaking change which fixes an issue)

How Has This Been Tested?

Testing normal login flow
Testing protected endpoints i.e. anything which isn't /auth/login or /tools
