@ronaldtse Pushed out changes for windows.yml, old log is gone now :(

Changed ruby vers to 2.7 and 3.1 for workflows

Can you try running it manually? As I can't trigger it because of the change, which makes sense as this would allow me to run untrusted code

I removed a gem that wasn't building and wasn't even needed, let's try again. If it still don't work I'll set up a Windows VM and troubleshoot it further.

Ping @merceroncode : some failure with Ruby 3.1 and 3.2.
