Fix MCAP generation #77

MCAP files are being generated, however they have some issue in their encoding. We should also fix the way that mcap files are encoded to better organize the topic structure.

This becomes broken in this PR #73, however merging this change is blocking progress and was merged anyway.

mcap is not great, it makes us rely on foxglove which is really poorly supported. We should convert to MDF4/MF4
