Clean up docker-compose.yml files and Dockerfiles #64

Remove the docker-compose.yml files which lived in the 'backend' and 'frontend' directories. The top-level docker-compose.yml is the best working version. A Dockerfile remains in each of the 'backend' and 'frontend' directories because the containers described in the docker-compose.yml file use different images built from those Dockerfiles
