Set up GraphQL

Goals

• [ ] Set up GraphQL client
  • [ ] Abstract the actual client from our code, so that we can easily mock and test without network calls
• [ ] Create a basic schema definition (required for mocking the api). Eventually this will be created either via introspection, or by moving to a monorepo and sharing the schema.

@kanyetehgiant Still working out some details on this, but I went ahead and opened the PR, so we have a dedicated, topical chat space of sorts. Still working on a few things, may end up renaming this repo and moving back to a monorepo before too long, but I think I'm nixing the microservices plan for now. That's something I can revisit at a later date.
