feat: add new releases to the version matrix #232

Adds the next round of Magento and Mage-OS releases to the version matrix.

This should be merged following the upstream release on October 8.

Note this doesn't include the 2.4.8-beta1 release. Should we mirror and push that too?

We'll need to figure out any changes to the system requirements for that, if so.
