Thanks to @DabblerIOT for their PR #63 for the inspiration for these changes. Hopefully this also meets their needs.

Should fix, or at least severely reduce #39.
Should fix #64 by swapping to Optional instead of using |
Should fix #62 by bumping pycognito to >=2024.2.0 and using pyJWT instead of python-jose
