Update Beta branch dependencies and fix default rule to match current Sigma Specifications #52

Makes https://github.com/magicsword-io/sigconverter.io/pull/51 obsolete and updates the poetry.lock files to be the latest version of all current running backends.

What I suggest since we're moving to the latest is to leave the beta badge and all those html things. Since the beta branch will always be "beta". Then we'll also apply the latest stuff to main so that everything is the same

I've been offline for quite a bit so I haven't looked at it yet. Now I'm back, I'll take a look and get it merged as soon as I can.
