Process quijote sims to match rho_to_halo output #8

Added script to convert the halo catalogues of Quijote to the same format as produced by rho_to_halo.

Currently the paths are hard-coded in the script since no configuration files have been set up here yet, so this should be modified when available.

Note that this requires Pylians to be installed to run. We don't have an environment defined anywhere, but just noting this for when we do.
