Builds sampling table csvs and READMEs.

I have moved the table notebook, csvs and READMEs to this new branch to save trying to fix the conflicts arising from trying to merge the ancient one.

As discussed, long column headers have been reinstated and reference to tables in manuscript removed.

Two csvs, one 'per-sample', one 'per-site >=10 samples'.
READMEs have been produced for each table to explain rows/columns.
