Replace EVSVesuvio with mvesuvio #95

This PR renames the EVSVesuvio directory mvesuvio.

This allows for a simple import mvesuvio in python, and brings us one step closer to the file structure mslice has. This current file structure works as is, so I see replacing it as a low priority.
