Update CI to use Xcode 12.2 #538

Update the CircleCI yaml file to use Xcode 12.2 once it has been released.

See this table for current releases: https://circleci.com/docs/2.0/testing-ios/#supported-xcode-versions

When CircleCI adds the 12.2 stable release, we need to update.
