Find a way to initialise the Flask app differently based on whether you're testing it or running it in production (either use ENVIRONMENT VARIABLES as a global switch or keyword arguments in the create_app factory function)

This will further improve switching things on/off during testing and improve control overall.

Also change the README.md to reflect the config changes.
