QA: Update to MongoDB 7 #232

The latest version of Postgres is MongoDB 7. Upgrade the QA environment to use MongoDB 7by default.

The QA environment and docker configuration has been updated to use MongoDB 7 by default. MongoDB versions 5 and 6 can now be run standalone on demand.
