I am very interested in this sensor but would like to know how to configure it in marlin and wire it to my BTT SKR E3 V3 mini board.

you needs to run the latest marlin firmware https://github.com/MarlinFirmware/Marlin/tree/bugfix-2.1.x the wire connection to the E3 V3 mini board is the same as BLtouch. here is the wiki doc for the marlin:https://github.com/markniu/Bed_Distance_sensor/wiki/Installing-Bed-Distance-Sensor
