Bump Sphinx requirement upper bound to <7.0 #42

Tested with Sphinx 5.3.0 and 6.1.3 with no issues (very easy with pip install sphinx==5.3.0 in a virtualenv), but on a small doc : https://club-1.github.io/sphinx-inventory-parser/index.html
