Update source for kotlin-language-server #7990

Current source https://github.com/mason-org/mason-registry/blob/de3bad58c6664810233e5dcdaab1e57569a14a8b/packages/kotlin-language-server/package.yaml#L13 is unmaintained.

https://github.com/kotlin-community-tools/kotlin-language-server exists now instead

I would wait until there is a new release we can leverage. Otherwise it would be hard to maintain. I'll keep it marked for myself for now
